So I just rummaged through my fridge, pulled out some ingredients that would be good in soup, and this is what I came up with.
Ingredients
1/2 medium onion
2 stalks celery
1/2 red pepper
2 cloves garlic
1 quart chicken stock
1 pound ground turkey
1 bag microwave brown rice*
3 sprigs thyme
oregano, dried parsley, red pepper flakes, salt and pepper (add all seasonings to your taste)
olive oil,
2 pats butter
2 Tbsp flour
I love the new bags of frozen rice that you steam up in the microwave. It saves so much time and I use it for any dish where I need rice. I haven't cooked raw rice in ages.
Pop the bag of rice into the microwave. Dice all your veggies to about the same size. Heat the olive oil and butter in your soupy pot and toss in the veggies. Saute until they are all soft. Sprinkle with the flour to create a rue. Cook for a minute to cook out the flour. Add chicken stock.
Meanwhile, in another pan brown your ground turkey. Season with all seasonings while you are browning.
Add turkey and rice to the soup. The rue should make it just slightly thicker, which I like instead of a watery soup.
This turned out great. I was surprised because I threw it together while Harper ate dinner, so I wasn't even really paying attention. When I sat down to eat, I shared some with Harper and she couldn't get enough. This was definitely a good made up recipe.

those rice bags are great... I have tried brown rice in the rice cooker and it always burns half.
