After a rough time last weekend, and missing a day of work, I needed a soup that was easy to make and easy on the stomach. This beef stew turned out perfect.
Beef Stew
Ingredients:
cubed beef stew meat
15-20 baby carrots chopped
3 potatoes, diced
1 onion, cut into chunks
2 sprigs rosemary
2 cans beef stock
2 cans water
salt & pepper to taste
Directions:
I cut up all my veggies the night before. To keep the potatoes fresh I stored them in a bowl of water in the refrigerator. In the morning before work, I put all the ingredients in my crock pot. The beef cubes were still frozen. I turned it on low, and by the time I came home from work, I had a yummy stew waiting for me. I love when that happens.

I made a great beef stew in my crockpot not too long ago too! Yum! I did have to laugh though...cause when I think of something light and easy on the stomach....beef isn't exactly what comes to mind.
